Meatball stew


Meatball stew is the ultimate one-pot comfort food meal. There is so much to love about it – how it smells as it cooks from the oven to the pot, how warm it makes the kitchen feel, and of course I also love eating it and having leftovers that are even better the next day.

INGREDIENTS

  • For the Meatballs:
  • 3 lbs. Ground Beef
  • 2 medium Onions, chopped fine
  • 3/4 bunch Green Onions, chopped fine
  • 1/2 large Bell Pepper, chopped fine
  • 1 Egg
  • 1½ Tbsp. Tony Chachere’s Creole Seasoning
  • 1/2 Tbsp. Black Pepper
  • 1 Tbsp. Onion Powder
  • 1/2 Tbsp. Garlic Powder
  • Cayenne Pepper, to taste
  • 2 cups Italian Bread Crumbs
  • For the Stew:
  • 2 cups Canola or Vegetable Oil
  • 2½ cups All-Purpose Flour
  • 1¼ bunches Green Onions, chopped
  • 3 large Onions, chopped
  • 2½ Bell Peppers, chopped
  • 4 heaping Tbsp. chopped Garlic
  • 10 cups Water
  • 1½ Tbsp. Tony Chachere’s Creole Seasoning
  • 2 Tbsp. Onion Powder
  • 1 Tbsp. Garlic Powder
  • Salt & Pepper, to taste
  • 3 Tbsp. Beef Bouillon
  • Cayenne Pepper, to taste
  • 1 (5 lb.) bag Red potatoes, cubed large
  • 2 lbs. Carrots
