Easy marinated Chickpeas Instructions:
1 ) In a medium serving bowl, combine the chickpeas, red peppers, feta and basil.
2 ) In a small bowl, whisk together the olive oil, vinegar, honey, garlic, oregano, salt, pepper and red pepper flakes.
3 ) Pour the dressing over the chickpeas and stir. Cover the bowl and stick it in the fridge for at least 30 minutes, for best flavor. The salad keeps for up to 5 days in the refrigerator.
It tastes awesome! And it’s completely fine to add a touch more of lemon juice if you like it (about right where I want it so super simple). You can keep these marinated chickpeas in the fridge for up to a week. Put them on top of salads wraps, pitas bowls, or whatever suits your fancy they’re just a really easy light summery, and a great source of protein to have on hand.
