Crispy Caramel Cookies Recipe Rich With Chocolate

This caramel cookies recipe is very sweet, crispy and rich with chocolate. It’s has a nice look and it’s suitable for birthday gifting, and it can be a nice extension together with what you’re gifting to your mom in mothers day. INGREDIENTS:

  • IN CUPS:
  • Cookie dough:
  • 1/4 Cup walnuts
  • ¼ Cup sugar
  • a pinch Salt
  • 1 cup Cake flour
  • 1/2 cup unsalted butter
  • Caramel sauce:
  • 1/2 cup heavy cream
  • 1 tsp water
  • 1/2 cup sugar
  • Approximate 2/3 cup chocolate chips




  • IN GRAMS:
  • Cookie dough:
  • 30g walnuts
  • 30g sugar
  • 1g salt
  • 130g cake flour
  • 100g unsalted butter
  • Caramel sauce
  • 100ml heavy cream
  • 1 tsp water
  • 100g sugar
  • 100g~ chocolate




  1. In a food processor put Cookies, walnuts, sugar and blend until well combined.

2. Add 1 cup of cake flour, a pinch of salt and process again to mix the ingredients together.

3. Add about 1/2 cup of unsalted butter and blend until you get a nice thick paste. TIP: Cut the butter into small pieces to avoid destroying your food-processor.




4. Put the paste in a plastic bag, and press on it from the top and sides to give it a bar form.

5. Depending on the quantity of the ingredients above, the bar length should be about 15 inches. Cut it into small cookies with a approximately 0.5 inch thickness for each bar.

6. Place the cookies on a large pan and bake them in preheated oven to 160 degree Celsius for 15-30 minutes. And once it’s cooked, let it cool, and start making the caramel sauce.





Caramel:

  1. Pour 1/2 cup of heavy cream in a large glass bowl, warm it in microwave to about 60 ◦C and set it aside.

2. In a deep handed pan, put 1 Tsp of water and 1/2 cup sugar and cook it on a medium heat until it’s bubbling.

3. Add the warm heavy cream into it and put it back on the heat, and keep cooking and stirring the mixture until you get a nice caramel with brown color.

4. Now, melt the chocolate in the microwave, and pour it into the silicone mold spreading it evenly.

5. Pour the caramel over the chocolate and place the cookies on it, and then cool it in the fridge for about 5 mins.
